500 ml water
4 sprigs fresh lavender (for garnish)
For the syrup:
250 ml water
50 g fine sugar
30 ml honey
1 tablespoon dried lavender
To prepare the syrup: Bring 250 ml water and sugar to a boil in a saucepan. Stir gently until the sugar fully dissolves. Remove from heat, then stir in honey and dried lavender. Cover and steep for 15 minutes. Strain through a fine sieve, then mix in juice from 5 lemons and the remaining 500 ml water. Refrigerate until fully chilled.
