cook your lettuce

No joke. It's a tip from Hugh Acheson, chef and author of the book The Broad Fork. It is something different and it makes the lettuce tasteful.

Cook the lettuce for three minutes with a tablespoon of butter. Choose a firm lettuce type such as romaine. Once half of the water has evaporated, season the cooked lettuce with some salt, chicken stock and a teaspoon of lemon juice. Place the lettuce in a bowl and stir in some more butter. Roast some pine nuts in a pan and garnish the lettuce with it.

Other ways to eat lettuce warm
Wooking, grilling, stewing:it's all possible with lettuce. Use firm lettuce. Lettuce does not have to shrink, like spinach for example. You can also make a delicious salad soup.
