This version uses lime juice, but it's versatile—try other fruit juices too. Stick to clear juices rather than nectars (made from purées), which can separate during freezing.

Light Lime Granita

500 ml water, 200 ml lime juice (concentrate like Pulco, often cheaper than fresh limes), 2 level tablespoons powdered sugar. Shallow plastic container, fork, mixing bowl, freezer.
Recipe Steps
In a bowl, stir lime juice and sugar until fully dissolved. Add water and mix well. Pour into the shallow container and place uncovered in the freezer.
After 30 minutes, scrape the mixture with a fork to break up ice crystals. Repeat every 30 minutes, 2-3 times, until it forms a light, glittery texture—preventing a solid ice block.
Serve in tall glasses, garnished with chopped mint leaves for extra freshness. For guests, rim the glasses with sugar for a festive touch.
