  • powdered sugar

  • vanilla sugar

  • icing sugar

  • cottage cheese mousse
    500 g
  • chopped prunes
    120 g
  • prune purée
    170 g
  • chopped dried apricots
    60 g

When the smoothness and sweetness of cottage cheese mousse meets the sugar and aromas of dried fruits.

Prepare the cream cheese mousse:

Mix and beat the cottage cheese with the sugar.

Whisk the 2 egg whites until stiff, adding a pinch of salt.

Pour in the vanilla sugar while stirring.

Combine the mixture with the sweet cottage cheese.

Stir in prunes and dried apricots.

Garnish a log mold with dried fruit mousse and incorporate the cream of prunes in the centre. Finish filling the mold and put in a cooling cell or, failing that, in the freezer.

Unmold and coat with neutral glaze. Leave to thaw for at least 2 hours in the fridge.

Cut into regular slices.

Place 2 or 3 slices per plate. Serve with dried fruits macerated in a spiced syrup.
