Salmon steaks with herbs and cashew nuts (Thai)

Prepare the seasoning

Sprinkle the salmon steaks with fleur de sel and cook them on a preheated cast iron grill. Also dry roast the cashews.

While the fish is cooking, cut the apple into thin sticks then put them in a salad bowl with the onions, mint, coriander and lemon juice. Add half of the seasoning.

Arrange salmon steaks on serving plates, garnish with apple mixture and toasted cashews. Drizzle with the rest of the seasoning and serve.

For the seasoning, combine all the ingredients in a small saucepan and bring to a boil. Remove from the heat, pass through a fine sieve and let cool to room temperature.

Notes:Traditionally this dish is prepared with green mango or jujubes, but these fruits are not very easy to obtain in France. Prepare the seasoning at least 30 minutes in advance so that it has time to cool, however the apples will be peeled and cut at the last moment as they may darken in the air.
