Couscous Salad with Pulled Oats Recipe

A couscous salad is tasty and easy. The couscous only needs to soak, while you prepare the rest of the ingredients.

Ingredients for the couscous salad

For 2-3 people

  • 1 pack of Pulled Oats® Nude
  • 1 vegetable stock cube
  • 150 g couscous
  • 2/3 tsp turmeric
  • 2/3 tbsp paprika powder
  • 1 tbsp honey or agave syrup
  • Olive oil
  • 1 tbsp Ras El Hanout
  • 2/3 tbsp garam masala
  • 1 small onion
  • 40 g dates
  • 40 g dried apricots
  • 80 g chickpeas
  • 1 handful of kale, chopped
  • 1 handful fresh mint and coriander, chopped
  • 1 pomegranate, the seeds

Preparation method

1. Bring water to a boil for the couscous. Add the vegetable stock cube, turmeric, paprika and honey and stir. Add the couscous and olive oil. Remove the pan from the heat, mix well and keep the lid on the pan for 5-7 minutes.
2. Put some olive oil in a frying pan and fry the diced onion, garam masala and Ras El Hanout. Then add the Pulled Oats. Raise the heat to high and cook for 2 minutes.
3. Cut the dates, apricots, kale and herbs into pieces.
4. Mix together the Pulled Oats mixture, dates, apricots, chickpeas, kale, herbs and pomegranate seeds.
5. Serve with tzatziki and flatbread.
