Cauliflower pizza recipe

Nowadays you can buy a cauliflower pizza (base) in the store, but making your own is not that difficult.

Main course for 4 persons
Preparation time 10 minutes + waiting time 1 hour and 10 minutes

For the pizza base

  • 900 g cauliflower, in florets
  • 1 egg, beaten
  • 100 g fresh goat cheese
  • 2 tbsp cornmeal (polenta)
  • 2 tbsp olive oil

For the topping

  • 1 roll of soft goat cheese
  • 1 small red onion
  • 1 can or jar (400 ml) tomato sauce or pizza sauce
  • 75 g baby spinach
  • 75 g baby kale or cavalo nero (palm cabbage)
  • 2 tbsp walnuts
  • extra needed:food processor, large springform pan, greased and lined with baking paper

Preparation method
Preheat the oven to 200°C. Wash the cauliflower and pat dry. Grate the cauliflower coarsely, into a kind of coarse couscous or rice grains. Use a grater or a food processor for this. Boil the cauliflower in a little water with salt for 3 minutes. Drain well in a sieve. Wrap the cauliflower grains in a clean tea towel, close into a ball and wring out the moisture. Mix the cauliflower grains in a bowl with the egg, fresh goat cheese, cornmeal and a pinch of salt. Knead into a cohesive dough ball. Roll out the dough on the baking sheet into a large circle. Brush the top with olive oil.

Bake the dough base for 25-35 minutes until dry and golden brown. Take out of the oven. Cut the goat cheese into slices. Peel the onion and cut into rings. Brush the pizza generously with the sauce and divide the goat cheese over the pizza. Return the pizza to the oven and bake for a further 5-7 minutes until the cheese has melted. Divide the onion rings, spinach, baby kale or shredded palm cabbage and walnuts over the pizza and serve immediately.
